Ingredients

  • 24 oz. frozen corn thawed
  • 2 cans black beans rinsed and drained
  • 1 large white onion chopped
  • 1/2 bunch cilantro chopped fine
  • 1 fresh jalapeno chopped fine
  • 1/4 C pickled jalapeno slices chopped fine
  • 4.5 oz chopped green chiles 1 can
  • 2 T minced garlic
  • 3/4 C olive oil
  • 1/3 C apple cider vinegar
  • salt and black pepper to taste

Instructions

  • Combine all ingredients. The flavor improves if it can sit for a while.
