Black Bean and Corn Salsa
Ingredients
- 24 oz. frozen corn thawed
- 2 cans black beans rinsed and drained
- 1 large white onion chopped
- 1/2 bunch cilantro chopped fine
- 1 fresh jalapeno chopped fine
- 1/4 C pickled jalapeno slices chopped fine
- 4.5 oz chopped green chiles 1 can
- 2 T minced garlic
- 3/4 C olive oil
- 1/3 C apple cider vinegar
- salt and black pepper to taste
Instructions
- Combine all ingredients. The flavor improves if it can sit for a while.
