Chili
Simple ground beef and bean chili
Ingredients
- 1 ½ lbs ground beef, 80/20
- 1 white onion, diced
- 3 cloves garlic, minced or crushed
- 1 can (15 oz) hot chili beans
- 1 can (15 oz) black beans, drained
- 1 cup chunky red salsa
- 2 cups V8 juice
- 1 to 2 teaspoons ground cumin
- ½ teaspoon ground black pepper
- 2 tablespoons chili powder (approximately, to taste)
Instructions
- In a 5-quart dutch oven, cook the ground beef and onion until the beef is brown and the onion is soft. Add the garlic and cook for another minute or so. Drain excess fat.
- Add beans, salsa, and V8 juice. Bring to a boil, then reduce heat to a simmer.
- Add cumin, pepper, chili powder, and salt to taste. For greater depth of flavor, use more than one kind of chili powder, or add some Cholula or Sriracha. You may need to add a bit more V8 if the soup is too thick.
- Allow soup to simmer for an hour or so.
- Serve with shredded cheddar, sour cream, crackers, jalapenos, and/or cooked pasta.
