Chocolate Mayonnaise Cake with Dark Chocolate Ganache
Fudgy, moist, dark chocolate cake.
Ingredients
for the cake
- 2 C AP flour
- 1 C granulated sugar
- 3/4 C cocoa powder
- dash salt
- 1 t baking soda
- 1/2 C chocolate chips (optional)
- 1 C mayonnaise
- 1 t vanilla
- 1 C cold water
for the ganache frosting
- 10 oz Ghirardelli dark chocolate chips
- 6 oz semi-sweet chocolate chips
- 1 pint heavy cream
Instructions
- Combine all cake ingredients and beat until smooth. It may take a bit more water if the batter is too stiff.
- Pour into one 9x13 pan or two layer pans that have been non-stick sprayed.
- Bake at 350 for 25-30 minutes, being careful to not overbake.
- For frosting, heat cream to near boiling and pour over chocolate chips. Stir, patiently, until chocolate is completely melted.
- Allow to cool, stirring occasionally, until it's the right consistency for spreading. The cooling process may take an hour or more and can be sped along in the refrigerator.
Notes
The chocolate chips will make the cake extra-fudgy, almost like brownies. Leave them out if you want a more cake-like texture.
