Pressure Cooker Refried Beans

Ingredients

  • 1 lb dried pinto beans, washed
  • 1 medium onion, peeled and roughly chopped
  • 2 T garlic, chopped
  • 1/4 C olive oil
  • 1 t oregano
  • 2 t salt
  • 5 C water

Instructions

  • Combine all ingredients in a pressure cooker.
  • Cook on high pressure for 50 minutes; natural release.
  • Remove excess water, but set it aside if you need to add some back during blending. Blend with immersion blender until smooth.
