Chipotle-style Chicken
Ingredients
- 6 to 8 skinless, boneless chicken thighs
- 3 tablespoons olive oil
Marinade
- ¼ 7-ounce can chipotle peppers in adobo sauce approximately
- ¾ cup water
- 2 tablespoons olive oil
- 4 cloves garlic
- 1 tablespoon chili powder
- 1 teaspoon ground cumin
- 1 teaspoon dried oregano
- 2 teaspoons kosher salt
- 1 teaspoon black pepper
Instructions
- Combing all the marinade ingredients in a blender and pulse until smooth.
- Combine marinade and chicken in a large ziploc bag. Squish until all the chicken is thoroughly coated. Marinate in the refrigerator at least 2 hours or up to 12.
- In a large skillet over medium-low heat, saute the chicken in olive oil until golden brown. The internal temperature should be 160℉.
