Chipotle-style Chicken

Ingredients

  • 6 to 8 skinless, boneless chicken thighs
  • 3 tablespoons olive oil

Marinade

  • ¼ 7-ounce can chipotle peppers in adobo sauce approximately
  • ¾ cup water
  • 2 tablespoons olive oil
  • 4 cloves garlic
  • 1 tablespoon chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon dried oregano
  • 2 teaspoons kosher salt
  • 1 teaspoon black pepper

Instructions

  • Combing all the marinade ingredients in a blender and pulse until smooth.
  • Combine marinade and chicken in a large ziploc bag. Squish until all the chicken is thoroughly coated. Marinate in the refrigerator at least 2 hours or up to 12.
  • In a large skillet over medium-low heat, saute the chicken in olive oil until golden brown. The internal temperature should be 160℉.
