Potatoes and Green Beans with Andouille Sausage (Swamp Potatoes)

Ingredients
- 6 medium Yukon gold potatoes
- 1 pound fresh green beans
- 3 ounces butter (¾ stick)
- 2 tablespoons minced garlic
- 1 tablespoon
all-purpose seasoning - 1 tablespoon neutral oil (avocado, peanut, or vegetable)
- 14 ounces Andouille sausage
- 1 medium onion
Instructions
Prep
- Oven to 300°F.
- Peel and dice the potatoes into bite-sized pieces.
- Chop the onion into a large dice.
- Slice the sausage into coins.
Cook
- In a large oven-safe pan with lid or dutch oven, combine the green beans, potatoes, garlic, butter, and all-purpose seasoning.
- Cover and bake for 30 minutes.
- In the meantime, saute the onion and sausage in a hot skillet with the oil. Saute until they're starting to brown.
- After the potatoes and green beans have cooked for 30 minutes, add the sausage and onion.
- Cover and bake for 30 more minutes.
- Check for doneness and salt.
