Potatoes and Green Beans with Andouille Sausage (Swamp Potatoes)

Ingredients

  • 6 medium Yukon gold potatoes
  • 1 pound fresh green beans
  • 3 ounces butter (¾ stick)
  • 2 tablespoons minced garlic
  • 1 tablespoon all-purpose seasoning
  • 1 tablespoon neutral oil (avocado, peanut, or vegetable)
  • 14 ounces Andouille sausage
  • 1 medium onion

Instructions

Prep

  • Oven to 300°F.
  • Peel and dice the potatoes into bite-sized pieces.
  • Chop the onion into a large dice.
  • Slice the sausage into coins.

Cook

  • In a large oven-safe pan with lid or dutch oven, combine the green beans, potatoes, garlic, butter, and all-purpose seasoning.
  • Cover and bake for 30 minutes.
  • In the meantime, saute the onion and sausage in a hot skillet with the oil. Saute until they're starting to brown.
  • After the potatoes and green beans have cooked for 30 minutes, add the sausage and onion.
  • Cover and bake for 30 more minutes.
  • Check for doneness and salt.
