  • 10" oven-safe skillet

Ingredients

  • 6 stalks asparagus
  • 4 ounces ham
  • 4 ounces cream cheese
  • 4 ounces spinach
  • 4 ounces shredded sharp Cheddar cheese
  • 6 eggs
  • 1 tablespoon butter

Instructions

Prep

  • Cut the asparagus into bite-sized pieces, discarding the tough woody part of the stem.
  • Dice the ham into bite-sized pieces.
  • Place the cream cheese in a medium bowl and microwave until soft, about 30 to 60 seconds.
  • Crack the eggs into the bowl with the cream cheese, and whisk together.

Cook

  • Saute the asparagus in the skillet with the butter until the asparagus starts to soften.
  • Add the ham to the skillet and saute until the ham starts to slightly brown.
  • Add the spinach and saute until the spinach is completely wilted. Take the skillet off the heat.
  • Sprinkle the Cheddar evenly over the ham and vegetables in the skillet.
  • Pour the egg and cream cheese mixture evenly into the skillet. You might need to spread it around to make sure that everything is covered.
  • Place the skillet in the preheated oven. Bake until the center is just set. It should be slightly jiggly.
  • Allow to rest a few minutes before slicing and serving.
